The Royal Agricultural Society of NSW (RAS) announced the results of its 2022 Sydney Royal Cheese Dairy Produce Show, at a special awards ceremony held at The Stables, Sydney Showground.
Pecora Dairy was named Champion sheep, goat, buffalo or camel milk product for its Yarrawa cheese and was selected as part of the Australian cheese board perpetual trophy.
After four days of competition, which highlighted the strength and depth of Australia's dairy industry, multiple states have come out on top with champions across the categories of cheese, ice cream and gelato, milk, yoghurt, cream, and butter.
Sydney Royal Cheese Dairy Produce Show Chair of Judges, Tiffany Beer, said the produce this year was of an excellent standard and praised the judges for their knowledge and expertise.
"Champion dairy products start with great quality milk. The producers need to understand the seasonal and other characteristics of the milk, use their expertise to make products suited to the milk and be committed to ensuring the ideal conditions for that product at all stages of production," she said.
"The quality of the ice creams and gelatos were excellent, most had a smooth and creamy mouthfeel, and the flavours were generally true to type. There were also some exceptional buffalo, sheep, and goat products.
"The Champion cheese was very well made, with complex well-balanced flavours and a rich creamy texture."
The competition aims to continuously raise the standard of the Australian dairy industry by assessing produce against benchmark scores.
Judges award points for several qualities, including flavour, aroma, texture, and presentation, awarding gold, silver, and bronze medals to those that meet the respective benchmarks.
This year's competition saw a total of 72 gold, 134 silver, and 157 bronze medals awarded.
