Governor of NSW Margaret Beazley AC QC gifted a bottle to Queen Elizabeth II on her Platinum Jubilee, on behalf of the people of NSW.
Valero Jimenez, director of Joadja Distillery, said they were "chuffed" their gin had been selected as a gift.
"We were honoured to have been set the task to design the gin and even more delighted that it's now with the Queen," he told the Post.
In late 2019, Joadja Distillery was commissioned by Government House to prepare a dry gin which reflected the aromas and flavours of New South Wales.
The result was a dry gin expression, containing five traditional botanicals including juniper, coriander, angelica root, cardamom pods, aniseed and five Australian botanicals including lemon myrtle, mountain pepper, strawberry gum, cinnamon myrtle and anise myrtle.
"The process of making and designing the gin was a lot of work, we had to be really specific about selecting and balancing the flavours," Mr Jimenez said.
The final product is described as a cool climate gin which is now commercially available as the Highland Gin.
Joadja's Highland Gin will be available at The Southern Highlands Food and Wine Festival on Saturday.
