The decision by the Burrawang Easter Marker committee was made on January 25, with safety cited as a factor.
Burrawang Wildes Meadow Village Association president Chris McCan said it was a difficult decision to make.
"The markets have been around for more than 20 years," he said.
"It started as small stall and it grew into something quite large. To organise something like that takes effort and requires 60 - 70 volunteers that help pre plan traffic management plans, meet with council and with police.
"Last year it was an instant decision. This year the committee which is made up of 12 representatives of local associations put it to a vote."
Mr McCan said it was ultimately about mitigating risks.
"We couldn't organise a to manage the market in a save way. It's too much of a risk," he said.
"We are still guided by NSW Health and we can't have that many people in once place at one time."
The Burrawang Easter Markets can attract more than 10,000 people each year.
A statement was posted on Facebook on the Burrawang Village page.
"Each year, our beautiful village attracts as many as 10,000 visitors to our Easter Market," it read.
"2020 saw our first event cancelled in more than 30 years as a result of the pandemic. As we continue to work together to keep our region safe, the Burrawang Easter Market committee has made the difficult decision to, once again, cancel the Easter Market in 2021.
"We understand this is disappointing, but our first obligation is to keep our community safe.We have written to our stall holders, who despite being disappointed, appreciate the decision we have made but remain supportive and committed to the 2022 Burrawang Easter Markets."
The committee also apologised for any disappointment or inconvenience caused.
