Emily's parents, Jono and Deb Hunt, noticed their youngest child had trouble smiling in early 2019.
After multiple tests, scans and hospital trips the Southern Highlands girl was diagnosed with a rare form of aggressive cancer called ATRT.
Since then Emily's parents, teachers at Oxley College, have been by her side at Westmead Childen's Hospital in Sydney.
Jono said the family has been greatly encouraged by recent results.
"Emily's tumour has reduced by more than 50 per cent," Jono said.
However, Emily still fights an uphill battle.
"These final rounds use some very toxic drugs, so Emily's body takes some time to recover," Jono said.
"During this period she is very susceptible to infection and requires lots of blood and platelet transfusions."
Jono said despite everything Emily was coping amazingly well.
"It has been a blessing both her parents have been able to be with her throughout this whole process," Jono said.
"[Emily] trusts she is safe."
The Hunt family said they would not have gotten this far without the support of the Southern Highlands community.
"Our Emily is such a blessing and it is so heartwarming to see how her story has been embraced by so many," Jono said.
On June 23 a fully restored 1940s train called the Emily Express, decorated in the brave girl's favourite colours of pink and purple, will depart Burradoo Station.
The event aims to raise $20,000 for the Ronald McDonald House and the Humour Foundation.
Tickets have already sold out.
"The support of our church, Bowral Church of Christ, and the Oxley College community has been wonderful," Jono said.
"We are completely overwhelmed by the incredible community spirit and generosity surrounding the Emily Express."
