A distillery harnessing Highlands potatoes and botanicals to make sophisticated and award-winning spirits, has opened its doors in the heart of Bowral.

SoHi, which is short for Southern Highlands, was established in 2021 and now has a store on Bong Bong Street.
"SoHi takes things up a notch and our first shop in our home town of Bowral is no different," founder and Bowral resident Alex Doughty said.
"We think the best shops are an experience, and our small, luxe space is certainly that."
When people walk through the store, they can taste their range of products, which include vodkas, gin, vermouth, pre-made martinis, a chocolate liqueur and negronis.
They can also bring back their SoHi bottles to be refilled and can repurchase the products at a discount.
When they are not refilled, the Small Impact Studio has fashioned them into glassware such as vases, bowls and mixing glasses.
"From the global research we've done, and from what customers are already saying, we think we've just opened the world's most beautiful bottle shop," the founder said.
Since the business launched, SoHi products have been featured in institutions such as Sydney's Oncore by Clare Smyth, Bennelong and Margaret, as well as on the shelves of independent retailers across the country.
The distillery's Extra Virgin Vodka won gold in the 2022 London Spirits Competition, along with its Potato Crisp Vodka and Garden Envy Gin being awarded silver and bronze.
The business has also been a staple at Highlands events, such as the Robertson Potato Festival.
The store is open every Thursday to Sunday from 11am to 5pm and private tastings can be done by appointment.
