Her Excellency Ms Alicia Moral Revilla, Spanish Ambassador to Australia will visit the Moss Vale based restaurant on December 10, and residents are invited to the festivities.
The restaurant is co-owned by local Chef Ian Armstrong and Mr. Angelo Oyales.
Mr Armstrong said he was absolutely thrilled to have the ambassador as guest of honour.
"After all we have been through these past two years I am thrilled and honoured that Her Excellency, the Spanish Ambassador to Australia will open our restaurant" he said.
Carca Restobar opened their doors back in April 2020 during the first COVID-19 lockdown and went straight into take away and home delivery service.
They were unable to have an official opening due to the pandemic.
Mr Armstrong said it was a "precarious time" to open the restaurant in the middle of the pandemic.
"Friends said we were mad. But we believed in what we were doing and were committed to realising our dream of having a Spanish inspired venue here on the Highlands" he said.
"Now we will have Her Excellency the Ambassador officially open the restaurant. What a remarkable turnaround."
Mr Oyales said he had nothing but praise for the locals who supported the restaurant since opening back in 2020.
"Truly, if it was not for the great people of the Highlands, those that came by to order take away or have the opportunity to dine with us, we would have closed the doors," he said.
"I have nothing but praise for the people of the Southern Highlands."
The night will be be hosted by Master of Ceremonies Randall Walker much to the delight of Mr Armstrong.
"I am also grateful that Randall has agreed to be MC for the night. Randall has a wealth of experience in the hospitality world both locally and state-wide, and I cannot think of a better person to be MC," he said.
The grand opening on Friday December 10 will include a Spanish inspired three-course banquet, live music by Mr. Tim Dickson and with live flamenco dancing performed by Marisol Santos of Moss Vale and will be sponsored by Tyrrells Wines of the Hunter Valley.
Bookings and enquiries may be made by calling the restaurant on 4868 3848 however tickets are limited due to current COVID considerations and guest's safety.
Cost is $90 per person which includes drinks and canapes on arrival, a full three-course banquet and live music throughout the night.
