It wakes to even further easing of restrictions after the state passed its 80 per cent double-dose vaccination target for people aged 16 and over on the weekend.
NSW hit the full vaccination target a week earlier than expected, and 91.9 per cent of people aged 16 and over have now received at least one dose.
A week after stay-at-home orders lifted and fully vaccinated people were allowed back at NSW pubs and beauty salons, those in NSW who have received two doses of a COVID-19 vaccine are from Monday able to enjoy even more freedoms.
Hitting the 80 per cent target also means NSW's status as a Commonwealth hotspot has been dropped, meaning hotspot-related support will cease in two weeks.
Emergency Management Minister Bridget McKenzie said the temporary COVID-19 disaster payment would wind down in NSW over two weeks, with people needing to apply each week to remain eligible.
NSW school children have also started the return to the classroom today with Kindergarten, year 1 and 12 students back on school grounds.
The NSW Independent Commission Against Corruption (ICAC) will begin to put the allegations that saw former Premier Gladys Berejiklian resign to the test as public hearings begin today.
The hearings will continue for two weeks with some big names on the witness list.
Ms Berejiklian resigned as premier earlier this month when ICAC announced it was investigating whether she had a conflict of interest in million of dollars of grants awarded to NSW Riverina institutions while she was in a secret close personal relationship with disgraced former MP Daryl Maguire.
Victoria gears up for freedom Friday

Haircuts as well as a parma and pot will be back on the menu as of Friday after the Victorian government announced it would end lockdown five days earlier than previously planned thanks to hitting its 70 per cent double-dosed vaccination target more quickly than expected.
International vaccination proof is ready
Australians will be able to apply for international proof of COVID-19 vaccination document from Tuesday.
The proof will be available to Australian passport holders and Australian visa holders who have their COVID-19 vaccinations recorded on the Australian Immunisation Register, federal government ministers said in a joint statement on Sunday night.
Nationals can't agree on a climate plan
The Nationals won't be rushed into an agreement on net zero emissions, David Littleproud says, after a marathon four-hour party meeting ended with no resolution.
Mr Littleproud warned Prime Minister Scott Morrison he could travel to next month's COP26 climate summit in Glasgow without its backing for the target.
Nationals MPs met on Sunday afternoon to thrash out a position on Energy Minister Angus Taylor's plan to reach net zero emissions by 2050, but the stalemate remained despite talks lasting four hours.
