Head teacher of animal care, equine and agriculture at the Goulburn campus Jillian Atkinson said all three degrees were very useful.
"The Performance Horse course covers a wide range of practical and theoretical bases," Ms Atkinson said.
"It involves anything from the handling and care, feeding and health and welfare of horses.
"It is based around current industry standards.
"Career opportunities upon completing the course include being a stable-hand, a stud-hand, a groom and working at an equestrian or racing stables."
The other two agriculture certificates are a livestock based course.
"It consists of some chemical training and livestock handling," she said.
"The course enables people to work with agricultural contractors and to work on farms as a station hand and livestock handler."
The Southern Highlands Food and Wine Association was one of the many Southern Highlands key stakeholders to support the three new courses and their president Renee Wallace outlined the importance of the additions.
"The potential for agri-tourism in a place like the Highlands is enormous and training the future workforce is a key part of that," Ms Wallace said.
"Having an education stream that feeds into the increased demand for Highlands food and wine is a no brainer."
Member for Goulburn Wendy Tuckerman was also pleased with the new courses, saying it was "a great initiative".
"This is a great example of how the community can work together to improve the local industry and employment," she said.
