The restaurant called Jimmy Nardello will be open over the summer until January 24 2020.
Jimmy Nardello will offer the exquisite joy of authentic regional Italian cuisine cooked with seasonal produce from the Southern Highlands.
Under the creative vision of head chef Stephen Santucci, the team will deliver menus that originate from around the Italian region.
"All the menus were lovingly created from hours of research into the real Italian cuisine that has been crafted and honed over hundreds of years," Mr Santucci said.

"We will deliver menus that originate from the Castelli Romani hill-top towns outside of Rome; showcase secret gems from Trieste and reveal Pugliese-styled hand-rolled pasta.
"Our hand-crafted salumi's were cured over the winter and will be featured in our summer menus.
"Many people think they know Italian cuisine; however, we will reveal another side to this richly complex cuisine."
Moonacres Kitchen is associated with Moonacres Farm, the award-winning organic farm based in Fitzroy Falls.
Stephen Santucci is a hatted chef, formerly head chef of award-winning Vini, Surry Hills.
