The event will be held in a 600 metre former railway tunnel from the mid 19th century.
Highlands Foodie Connection marketing, media and communications coordinator Claire Cooper said the regular tours were popular with local residents and tourists alike.
"We get all sorts of people from all walks of life," Claire said.
"They're fascinated by the process."
Claire said the mushrooms were unique in several ways.
"Chefs love to adapt them because they're unusual shapes and colours," Claire said.
"They're unusual - they've got all sorts of colours like yellow and pink."
The tunnel has been visited by prominent chefs such as Jamie Oliver and has been popular among members of the Sydney restaurant scene.
The tour will be led by microbiologist Dr Noel Arrold.
The Lisun Exotic Mushroom Tunnel Tours will be held on Sunday, January 24 from 10.30am and 12.30pm at 16 Davy Street, Mittagong.
Participants in the tour will receive recipes from Dr Arrold and Highlands Foodie Connection.
These will include mushroom and chicken soup, mushroom and pancetta and mushroom and cheese pizza.
Participants will learn about various mushrooms including chestnut, enoki, king brown, nameko, oyster, shitake, shimeji, swiss brown and woodear.
Bookings are strictly limited.
The next tour will be held on Easter Sunday at 10.30am and 12.30pm and bookings will open on February 1.
