The basics.
It's a philosophy co-owner Tracy Nickl speaks about with an almost religious fervour and one that has landed them yet another award.
Their humble vanilla slice has been named one of the best in the country by Wotif in their annual Uniquely Aussie Awards.
Finishing as a National Finalist, Nickl said it was rewarding to see his team acknowledged for the care they put in everyday.
"It's very humbling," he said.
"It's one of our cornerstone products so it's something we've been known for for a long time, something we do fresh everyday, care about and are passionate about. All the team knows how fanatical I am about it."
It's a staple product at any Australian bakery worth their salt (or sugar) and Nickl revealed he'd carried on the tradition from a Swiss master after his apprenticeship.
"It's been like that since my apprenticeship," he explained.
"It's one of those classics that you don't mess with. I did my apprenticeship in Sydney under a Swiss master and then I went to work in hotels for four or five years before coming down here and starting Gumnut 26 years ago.
"We were actually talking in the kitchen this morning and I said anyone can make a cake but only a pastry chef can make them the same everyday. My master used to say that to me.
"Consistency is paramount and the key to any successful business. I believe in what we do, I'm fanatical about it."
That consistency has locals and visitors alike lining up and Nickl said they were once again ready to go once news got out.
"It's had some amazing success at different competitions over the years," he said.
"It won champion at the Sydney Royal Easter Show a few years back and it was named best in Australia once.
"Every time that happens we have a massive spike in sales. It's one of the top sellers anyway but anytime it gets any attention we get bombarded."
