Highlanders were supposed to raise funds last week for the Australian Himalayan Foundation (AHF) at Berrima Vault House.
Guests would have enjoyed a two-course meal, canapes, a welcome drink, an auction and live music.
AHF chairman Simon Balderstone AM said despite the rescheduling, the foundation has received "fantastic" support for the auction and raffle prizes, and were understanding about bookings.
The AHF aims to raise funds for health and education programs needed by poorer and remote communities in the Himalayas.
The pandemic has exacerbated the challenges locals face with access to education and adequate health supplies, as well as environmental issues.
"There have been limited resources, and we raised funds where we could," he said.
The foundation cancelled events such as their regular trips and annual fundraiser last year and this year.

They have supplied PPE and oxygen concentrators to the mountains throughout the pandemic to help them cope with the crises.
Mr Balderstone also wanted to let Highlanders know that the foundation is a "home-grown organisation".
"We were formed in the Bundanoon Hotel," he said.
"We were co-workers who spent a lot of time in the Himalaya and wanted to give back to the communities."
The foundation has successfully implemented flagship education programs in the Himalayas to provide remote students with schooling.
They have provided school supplies, furniture and equipment, as well as raised funds to provide training for teachers.
The AHF's educational program has also been tailored to educate more girls in the remote and disadvantaged areas.
The AHF has raised over $13 million for disadvantaged communities in Bhutan, Nepal and Ladakh.
The accredited Australian government overseas aid agency's motto is "we give what is needed most to those who most need it".
