The Hungry Monkey officially has a home in Bowral's High Street Arcade and welcomed hungry and excited customers at today's opening.
The franchise - that started in Kiama and then expanded to Berry - opened to the public at 7am this morning and was filled with customers at lunchtime.
Manager Henry Phillips said he wanted "the Bowral community to see what the Hungry Monkey is all about."
"We want to base ourselves in our community," he said.
"We want it to be a destination with a welcoming vibe."
The team looked at spots across Bowral and Moss Vale last year before settling on the spot in the arcade.
"It's like a hidden destination," Mr Phillips added.
"The Kiama location is even more hidden and it's booming - it gives us the confidence that we don't have to go onto the main street to be seen.
"Word of mouth will get out.
"We listen to what people want and try to make it work."
He also said today has been about welcoming people and "making sure the team has fun."
Construction began in February and finished yesterday.
Mr Phillips also revealed that the café aims to open 10-12 stores over the next four years.
The Hungry Monkey will introduce $10 burger nights from Wednesday, May 19 to its Bowral location.
