In his new show 'Roadtrip for Good', the season two MasterChef winner, author and TV presenter will visit bushfire affected regions.
Over four episodes, Liaw will unearth some of the best food Australia has to offer, making mouth-watering Asian-inspired dishes with the produce he collects along the way.
In one episode, Liaw stops into The Little Hand Stirred Jam Shop to pick up some tomato sauce - an Aussie staple - to make one of his favourite dishes Perking style pork ribs.
"This is a real village community that relies heavily on tourism and that was really highlighted during the last 12 months as it's been a difficult time for all the town," he said.
The Little Hand Stirred Jam Shop owner Fiona was able to spend time with Liaw in the kitchen.
"Adam came on the June long weekend just after lockdown, so it was a busy time in Berrima," she said.
"He was looking for small regional towns that had been affected by bushfires and COVID. While Berrima wasn't directly impacted by the bushfires, being a small tourism village it was the economic impact that affected us. A lot of us had been affected by evacuations.
"Essentially people stopped visiting Berrima in November last year and that's normally one of our prime times. Then we had COVID.
"So it was such a great boost for the village for Adam to have that interest and come and see us.
Fiona said Adam spent a bit of time with her in the kitchen where she cooked some chilli jam.
"He decided that he wanted some products that we produce," she said.
" Adam used one of our best sellers, our tomato sauce, to make Peking pork ribs.
"He also took away some amazing Yandilla mustard seed oil, some Ollson's salts. I didn't know what he was going to create.
"I'm looking forward to making the dish myself."
Roadtrip For Good is a community-led non-profit initiative established in response to the bushfires. It encourages people to give back to bushfire-affected communities by planning their own #roadtripforgood via its website.
Roadtrip for Good is about telling their stories and reminding people what's great about regional Australia.
"Their resilience in the face of so much is truly inspiring, and if we can help them by safely getting out to these areas and boosting our domestic economy in the process it's a triple win," he said.
"A win for the regions, a win for those of us who get a great holiday, and a win for Australia as a whole."
SBS commissioning editor for food said that everyone loved a road trip to support people in need.
"With such loss felt across regional NSW, Victoria and South Australia, it's inspiring to see how these businesses have risen from the ashes to recover and rebuild," he said.
"Overseas travel is out of reach for us at the moment but Adam Liaw's Roadtrip for Good is a breathtaking reminder of the incredible destinations we have right here on our doorstep and how each region is bursting with fresh food and flavours."
