The Three Spuds Bistro recently opened in Robertson and has so far been a big success.
Located in the Robertson Bowling Club, current owner/operator Sandra Thompson is no stranger to the area
Born in the Illawarra, Sandra always had a connection with the Southern Highlands, first through family and then through work.
"Working in Robertson previously and getting to know the people and the atmosphere definitely drew me back here," she said.
She has worked in the hospitality industry since she was 18 and previously ran two businesses.
"I have served many of the customers in Robertson as I worked with the previous bistro operators before I took over," she said.
When the previous tenants decided to leave, Sandra was offered the chance to run the bistro.
"I was all in straight away as I had previously worked with the owners of the last bistro and fell in love with the community, the town and the atmosphere," she said.
"I have always enjoyed running my own business and was happy to take over."
With an exciting new business venture ready to launch, there was only one thing that presented a slight problem - the COVID-19 pandemic.
What was originally planned to be a "huge opening week" had to be put on hold.
The bistro is currently serving plenty of delicious home cooked food, which for the moment, is available to takeaway.
They make all of their pasta sauce, lasagnes, cakes, quiches and burger patties.
"We wanted to still be there for the community and be able to offer them a great bistro experience even if it was less than what we originally planned for," she said.
"Opening in the pandemic was scary and uncertain but I am glad we took the leap."
Sandra is currently running the business herself with the help of family. She said when the pandemic was over, she hoped to be able to employ more staff.
With another option for delicious food available for Highlanders, Sandra said the Three Spuds Bistro had received a warm welcome.
"We feel so welcomed and supported by the Robertson community and feel that they like what we have been able to offer in these times," she said.
Once the pandemic is over, Sandra said the bistro would be open for eat in and takeaway with a "much bigger menu" along with a grand re-opening celebration.
The Three Spuds Bistro is currently open Monday to Friday from 4pm until 8pm and on weekends from 12pm until 7.30pm.
