In the past few weeks, the food and wine duo renovated the Berrima restaurant over three weeks and re-opened the business.
Cass said Highlanders have given the new owners a warm welcome.
“We have received such fantastic feedback and support from our customers and the Southern Highlands community,” she said.
“During our first week we had an abundance of Eschalot diners, old and new, and it was such a wonderful experience getting to know them and providing them with some of the best produce and wine the Southern Highlands has to offer.”
Cass said she hoped the business would continue to be a popular dining destination.
“We hope Eschalot continues to be one of the ‘must visit’ restaurants in the Southern Highlands and that we can continue to showcase the amazing produce, both food and wine, that the Southern Highlands has to offer.”
‘Cowanders’ showcase the Highlands
Photographer Bodhi Todd has created a 2019 calendar to showcase cows of the Southern Highlands.
Bodhi went through thousands of images to pick the final 12 for his calendar.
The price is $25 each or three for $65.

Robertson business goes online
The Perfume and Skincare (P and S) Company in Robertson is moving its business online.
The business will close on Saturday, October 20, and will make way for the Southern Highlands Artisan Cooperative.
The partners in the new venture are Chats Cafe owner Saidur Chowdrey and artisan Nic Abel.
The business will give Highlanders access to locally-designed, locally-created and handmade products.
Owner John Massetti said P and S would focus on its core business, the internet, mail, export and wholesale.
“It’s a sad time for us. We have been creating, making and retailing our products in Robertson for now almost 17 years. We've been trading in this building for around ten years, long time,” Mr Massetti said.
“We wish Saidur and Ric much success with their new venture.”
