The Bowral restaurant was one of four restaurants in regional NSW to receive the rating. Biota Dining owner James Viles said he shared the success with his team, including managers Ben and Nell Shephard.
“We have some amazing staff, we can’t do what we do without them,” Mr Viles said.
“It’s such a team effort, I’m just so proud of them all.”
Mr Viles said he was always “humbled and excited” to receive a hat.
“You put your head down and you work hard all year. It’s a nice surprise if it happens,” he said.
“It’s good for the junior staff too. I think back to when I was a young cook, and I wanted to work in the top 50 restaurants. It’s nice that Biota Dining is that.”
Meanwhile Bistro Officina received a one-hat rating in the Good Food Guide.

The restaurant was one of 18 restaurants across regional NSW to receive the accolade.
