The new list, launched in February, was compiled by restaurant reviewers and food industry experts who decided upon the top 500 restaurants in Australia. From there, chefs and restaurateurs are invited to vote for their top ten from the list, in order of preference, which will result in a top 100 list that will be announced in May.
Josh Levings from Josh's Caf said he had no idea that his restaurant had made the list until a customer told him.
"It's very exciting and motivating for us. It's nice to be recognised - we put a lot of work in so it's good to get a pat on the back like this," he said.
Mr Levings said he was appreciative of his staff and customers.
"We all enjoy what we do and it's a happy place when it all comes together," he said.
Biota is no stranger to accolades, earning two hats and status of the Regional Restaurant of the Year in 2014 and 2015 and Regional Wine List of the year in 2014 in the Sydney Morning Herald's Good Food Guide.
Australia's Top 100 Restaurants is the first chef-driven awards platform and will be published in both the Australian Financial Review and goodfood.com.au after the awards are announced in mid May.
