The inaugural Pie Time Best Pie competition is almost here and Highlands bakers are perfecting their entries.

The Southern Highland News will feature the Best Pie Competition entrants in the lead up to the mouth-watering event.
The first pies out of the oven are from The Mill Cafe, Bowral. The Mill has entered two tasty morsels in the competition, both a vegetarian and a seafood pie.
While chef Patrick is still fine tuning the recipe, he said his pies have the ability to win the competition.
“Our seafood pie will have a smoked fish and a local white wine,” he said.
“Our vegetarian pie will be filled with winter produce from Moonacres Farm and will have protein through seeds and nuts.”
The ingredients used in the pies will be locally sourced.
“Local produce is part of our main business model and that paddock to plate style,” Mill Cafe owner Garry Lomas said.
Garry and Patrick decided to enter a vegetarian and seafood pie in the competition as they found those pies were hard to come by in the Highlands.
“There are so many place to get a good meat pie in the Highlands and its quite difficult to get a good seafood or vegetarian pie,” Patrick said.
“These pies will be very flavoursome.”
The Best Pie competition will be held on June 22 and 23.
