One school is Berrima Public School, which is being represented for the first time in several of years.
Dance teacher Rebecca Dann said the students would be featured in one item with several other schools.
"The theme of the item is the movie 'Inside Out', and the children will represent the character Fear," she said.
"They will also perform in the finale with all the schools involved."
The children aren't the only ones who are busy preparing for Southern Stars.
Their parents are also involved, making costumes for the 30 students who are heading to the big stage.
President of the Berrima P&C Kath Long said the mothers were making skirts and shorts for the production.
"A lot of us are sewing for the first time," she said.
"The choreographer sent the costume requirements, and with the measurements we play it a little by ear."
The Southern Stars event will be held August 26 and 27.
