The list was compiled based on votes cast by the chefs and the restaurateurs. Those who made it in to the top 500 in March (which included Josh’s Restaurant at Berrima as well as Biota) were invited to vote for their top 10 restaurants in Australia in order of preference. 

NSW and Victoria split the top10 restaurants in Australia between them, with NSW restaurants Sepia in first place and Quay in third, and Victoria’s Attica in second.

Biota was the only regional NSW restaurant in the top 100.
