The Dragons held the lead before allowing Mt Annan to get in the game.
Mt Annan came close to scoring a try at the end which would have given the Knights a victory.
"It was an up and down game," coach Andrew Bowie said.
"To play bad and still come up with a win was a positive.
"It will give us confidence going into other games and they weren't an over strong side.
"We just need to put it behind us and move on."
Jason Delamont, Lachie Dickson (two) and Jake Newbury all scored for Moss Vale with Aaron Stone converting most of the goals.
Bowie said with another week off, he hoped to be able to get some proper training under the team's belt.
"We've got this week before we get back into it and then hopefully there's no more interruptions.
"When you're not able to train out on the paddock and put some ball work together it makes it hard."
