Simon and Scott Pyne from Hot Canary Gourmet Meats outsliced and diced a star-studded field of butchers to emerge with the inaugural Meat and Livestock Australia (MLA) lamb innovation title in Adelaide on Wednesday night.
The top gong comes just weeks after the Hot Canary scooped the pool at the State titles in Sydney.
"I was in tears when I found out and I was so proud and happy," Hot Canary owner Bernadette Clarke said.
"These young kids have turned the whole shop around and they are very talented butchers.
"It's just amazing and a fantastic achievement for a couple of locals to be recognised as the best in the country."
During an intense five-hour national final, each two-man team had to cut up a side of lamb and whip up a range of culinary creations.
Teams were judged on creativity and cutting technique as well as price, profit principles and display.
The Pyne brothers opted for an Italian-Australian theme, coming up with a lamb cabanossi, lamb cannelloni and their world-famous lamb Popeye roast.
"We put a lot of effort into creating innovative and interesting cuts and dishes for our customers," Simon Pyne said.
"We are always looking for quick and easy-to-cook meals that are tasty and healthy."
